How we make Wine Ripened cheese

In almost every tour we get the question - how is the delicious Wine Ripened cheese made? Earlier we mentioned that the flavor of cheese is made in the ripening process - microorganisms, aka. the microflora of the cheese basement. In turn, for the micro-helpers to do their job, they need time - a long time.

The beginning of almost every cheese in the world is the same: milk-yeast-curdling-cutting-stirring-forming-salting-drying-ripening.


The Wine Ripened cheese, before settling down to the cheese basement, spends multiple weeks in red wine baths.
